- Para la masa coloca en un bowl harina, el azúcar, la levadura y el agua tibia y mezcla, una vez integrado agrega la cucharada de sal. Ponemos la sal al final para dejar que la levadura actúe con ayuda del azúcar. Forma un bollo y deja reposar por lo menos 30 minutos en un lugar templado hasta que duplique su tamaño.
- Pasado ese tiempo divide la masa en 2 formando bollos y deja reposar otra media hora cúbrelas con un paño para que no se sequen (puedes hacer dos pizzas distintas).
- Mientras reposan puedes elaborar la salsa, en una olla pon a calentar agua y cuando llegue a ebullición coloca los jitomates 5 minutos, antes de sumergirlos has un corte en forma de cruz en un extremo para que posteriormente puedas retirarles la piel.
- Sácalos del agua y corta la cocción sumergiéndolos en agua con hielo por un momento, retíralos y verás que es muy sencillo quitarles la piel.
- En una olla agrega aceite de oliva y sofríe la cebolla y ajo picados finamente, después agrega los jitomates cortados en cubos, una pizca de orégano sal y pimienta. Puedes agregar un poco de agua para que ablanden los jitomates y deja cocinar a fuego lento por lo menos 30 minutos.
- Estira tu masa y coloca en una charola para hornear y precalienta tu horno a 200 grados.
- Barniza tu masa con aceite de oliva y coloca una cama de salsa, los pimientos y cebolla cortados en julianas, los champiñones, los tomates cherry cortados por el medio, el parmesano y un poco de pimienta.
- Hornea por 12 minutos o hasta que veas la orilla de la pizza dorada.
- Retira del horno y agrega un chorro de aceite de oliva por encima y hojas de albahaca fresca. Yo cometí el error de hornear la albahaca (no se en que estaba pensando) obvio se marchitó. Y listo acompaña con lo que más te guste finalmente tienes masa para dos pizzas y puedes dejar volar tu imaginación con los ingredientes.
